Britain’s premier Sturgeon hatchery and Caviar farm based in Yorkshire.

Premier Farming Yorkshire is the trading name for KC Caviar Ltd based just outside Leeds, Yorkshire close to the motorway networks. Consisting of several large insulated poly-tunnels in an isolated yet secure location.

The nearby stream provides beautiful clear spring water which runs through the 1 million litres stored in the 28 stock holding tanks.

Fish husbandry is the responsibility of Mark and Megan who do the daily water changes, filtration monitoring along with water tests and feeding the fish. Other responsibilities include checking the sturgeon for indicators as to how the eggs are developing.

The Caviar side is run by John, Kacey and other part-time workers. Kacey checks the information from the fish houses and high lights any indicators regarding egg condition. This information is then used to decide when the fish is moved into the next season ready for ovulation and egg harvesting. John’s team do the Caviar harvesting, washing, salting and packaging.


Handing Over Caviar


Caviar farming is about quality and controls. KC has implemented the most stringent of HACCP and SALSA standards employing the services of Food technologist and a HACCP consultant plus Hygiene professional advisors. The CITES and local Trading standards bodies have helped ensure nothing has been over looked.

In addition KC have implemented a total transparency policy which identifies where every gram of Caviar produced is sold and from which female. Even more important, every can of Caviar can be traced to the supplying female through a QR code on the can.
