Lobster and langoustine with champagne sauce, skinny fries and green beans

Duck breast with balsamic pears

Anyone who prefers a game recipe will love this duck dish from Delish. Pan fry duck breasts and serve with rice cooked with parsley and chives. To lift the strong flavours of the meat, prepare the pears by frying in some of the discarded duck fat and a mixture of balsamic vinegar, sugar, water, orange peel and fried shallots.

Sauté garlic and shallots in butter, then add Arborio rice. Keep coating the mixture with white wine and stock until it is creamy and cooked, adding the Parmesan cheese at the end.

Fry the scallops by heating them in a non-stick skillet with oil, shaking as they cook to prevent them from sticking to the pan. Flip them over after two to three minutes until they are golden brown.

Drizzle melted butter over the scallops and risotto when serving, and accompany with sauteed garlic spinach.
